🍰 Simple Vanilla Cupcakes
Delicious, fluffy vanilla cupcakes topped with a smooth vanilla buttercream.
Ingredients
- 200 grams all-purpose flour
- 200 grams granulated sugar
- 10 grams baking powder
- 2 grams salt
- 115 grams unsalted butter
- 2 whole eggs
- 10 millilitres vanilla extract
- 120 millilitres milk
- 200 grams unsalted butter
- 400 grams powdered sugar
- 15 millilitres vanilla extract
- 30 millilitres milk
Instructions
- Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the softened butter until creamy. Gradually add the sugar and continue beating until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined. Tip: Be careful not to overmix the batter to ensure fluffy cupcakes.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, beating well after each addition.
- Mix in the vanilla extract. If the frosting is too thick, add milk, 1 tablespoon at a time, until you reach the desired consistency.
- Once the cupcakes have cooled completely, frost them with the vanilla buttercream.
