🍗 One-Pan Lemon Chicken
A simple, zesty one-pan lemon chicken dish that's perfect for a quick and flavorful dinner. The chicken is tender and juicy, with a bright lemon flavor that's complemented by garlic and herbs.
Ingredients
- 4 pieces chicken thighs
- 1 lemon
- 3 cloves garlic
- 2 sprigs rosemary
- 1 teaspoon thyme
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 300 grams baby potatoes
- 200 grams cherry tomatoes
Instructions
- Preheat your oven to 200°C (180°C fan). Season the chicken thighs with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until the skin is golden brown and crispy, about 5 minutes. Flip and sear the other side for another 2 minutes.
Tip: Ensure the skillet is hot before adding the chicken to achieve a good sear.
- Remove the chicken from the skillet and set aside. In the same skillet, add the garlic, rosemary, and thyme. Sauté for 1 minute until fragrant.
- Add the lemon zest, lemon juice, baby potatoes, and cherry tomatoes to the skillet. Stir to combine and coat everything in the lemon mixture.
- Return the chicken to the skillet, skin-side up, nestling it among the potatoes and tomatoes. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
- Remove from the oven and let it rest for a few minutes before serving. Discard the rosemary sprigs before serving.
