🍮 Mango Coconut Panna Cotta
A delightful blend of creamy coconut milk and sweet mango puree, set into a smooth and luscious panna cotta.
Ingredients
- 200 millilitres mango puree
- 200 millilitres coconut milk
- 8 grams gelatine powder
- 50 grams caster sugar
- 100 millilitres water
- 1 teaspoon vanilla extract
Instructions
- In a small bowl, sprinkle the gelatine powder over 50ml of cold water. Let it sit for 5 minutes to bloom.
- In a small saucepan, combine the coconut milk, mango puree, caster sugar, and vanilla extract. Heat gently over medium heat, stirring occasionally, until the sugar has dissolved.
- Remove the saucepan from heat. Add the bloomed gelatine mixture to the warm coconut-mango mixture. Stir until the gelatine is completely dissolved.
- Pour the mixture into four ramekins or small serving glasses. Place the ramekins in the refrigerator and allow the panna cotta to set for at least 4 hours or overnight.
- When ready to serve, run a knife around the edge of each ramekin to loosen the panna cotta. Invert onto serving plates. Optionally, garnish with fresh mango slices or a drizzle of coconut cream.
