🥩 Korean Gochujang Beef Bowls with Pickled Vegetables
A flavorful Korean beef bowl featuring tender slices of gochujang beef served over steamed rice, topped with pickled vegetables and a fried egg.
Ingredients
- 500 grams beef sirloin
- 2 tablespoons gochujang
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic
- 1 thumb-sized piece ginger
- 1 teaspoon sugar
- 50 millilitres rice vinegar
- 2 medium carrots
- 1 medium daikon radish
- 200 grams jasmine rice
- 4 large eggs
- 2 springs green onions
- 1 teaspoon sesame seeds
Instructions
- In a bowl, mix gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and sugar. Add beef slices and marinate for at least 30 minutes.
- In a small bowl, combine rice vinegar and a pinch of sugar. Add julienned carrots and daikon radish. Let it sit for at least 15 minutes to pickle.
- Cook rice according to package instructions. Set aside.
- Heat a skillet over medium-high heat. Add marinated beef and cook until browned and cooked to desired doneness. Remove from skillet and set aside.
- In the same skillet, fry eggs to desired doneness.
- To assemble, place a bed of rice in each bowl. Top with slices of beef, pickled vegetables, and a fried egg. Garnish with chopped green onions and sesame seeds.
