🍮 Brazilian Coconut Lime Flan
A delightful Brazilian twist on classic flan, infused with coconut and lime for a refreshing tropical flavor.
Ingredients
- 397 grams condensed milk
- 400 millilitres coconut milk
- 4 units eggs
- 2 teaspoons lime zest
- 60 millilitres lime juice
- 120 grams granulated sugar
- 30 millilitres water
Instructions
- Preheat the oven to 160°C (320°F).
- For the caramel, combine sugar and water in a small saucepan over medium heat. Stir until the sugar dissolves, then continue cooking without stirring until it turns a golden amber color. Quickly pour the caramel into a 6-cup (1.5-litre) capacity baking dish, swirling to coat the bottom evenly. Set aside to cool.
- In a blender, combine condensed milk, coconut milk, eggs, lime zest, and lime juice. Blend until smooth.
- Pour the mixture into the prepared baking dish over the caramel.
- Place the baking dish in a larger dish and pour hot water into the larger dish until it reaches halfway up the sides of the baking dish.
- Bake for 60-70 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove from the oven and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight.
- To serve, run a knife around the edges of the flan, then invert onto a serving plate. Serve chilled.
