🥩 Beef Brisket with Potatoes and Carrots
A hearty and comforting dish featuring tender beef brisket slow-cooked with earthy potatoes and sweet carrots.
Ingredients
- 1 piece beef brisket
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic
- 1 large onion
- 500 grams carrots
- 500 grams potatoes
- 500 millilitres beef broth
- 2 tablespoons tomato paste
- 2 teaspoons thyme
- 2 pieces bay leaves
Instructions
- Preheat the oven to 150 degrees Celsius.
- Season the beef brisket with salt and pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat. Sear the brisket on all sides until browned, about 3-4 minutes per side. Remove and set aside.
- In the same pot, add garlic and onion. Sauté until fragrant and softened, about 3-4 minutes.
- Return the brisket to the pot. Add carrots, potatoes, beef broth, tomato paste, thyme, and bay leaves. Stir to combine.
- Cover the pot and transfer to the oven. Cook for 5-6 hours, or until the beef is tender and easily shreds with a fork.
- Remove from the oven and let rest for 10 minutes before serving. Discard bay leaves before serving.
