🍚 Authentic Nepalese Selroti with Aloo Achar
Selroti is a traditional Nepalese sweet made from rice flour, often served during festivals and special occasions. Aloo Achar is a tangy and spicy potato pickle that complements the sweet taste of selroti perfectly.
Ingredients
- 200 grams overnight soaked rice grains
- 50 millilitres ghee
- water
- 1 teaspoon cardamom powder
- 1 teaspoon cinnamon powder
- 1 teaspoon nutmeg powder
- 50 grams sugar
- 500 millilitres oil
- 500 grams potatoes
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoons salt
- 50 millilitres lime or lemon juice
- 1 tablespoon roasted sesame seeds
- 1 tablespoon chopped coriander
- 2 pieces green chillies
Instructions
- Divide the overnight soaked rice grains into two portions. Grind one portion to a fine powder and the other portion coarse. Mix the ghee with the rice to achieve a sandy texture. Gradually add water to make a thick batter that is thick enough to easily flow when making circles from the funnel. Ensure the batter is not too thin to prevent disintegration and the flour is not too coarse.
- Mix in the cardamom powder, cinnamon powder, and nutmeg powder. Leave it to rest for 1 hour.
- Mix in the sugar and let it rest for 15 minutes.
- Heat oil in a pan over high heat. Using a funnel, pour the batter into the hot oil in circles.
- Fry until golden brown. The tiny bubbles forming outside of the selroti, with a crispy exterior and soft hollow interior, indicate a perfectly cooked selroti. Tip: If the rice is not soaked or mixed well with ghee, the selroti may turn hard.
- For the Aloo Achar, boil the potatoes until tender. Peel and chop into small pieces.
- In a pan, heat oil and add mustard seeds, cumin seeds, and fenugreek seeds. Once they splutter, add red chili powder, turmeric powder, and salt. Stir for a minute.
- Add the chopped potatoes to the pan and mix well. Pour in the lime or lemon juice and stir until the potatoes are well coated. Cook for 5 minutes.
- Sprinkle roasted sesame seeds over the Aloo Achar.
- Garnish with chopped coriander.
- Fry a couple of green chillies until crispy and add them to the Aloo Achar for extra heat.
- Transfer the Aloo Achar to a serving dish. Serve warm with the freshly fried selroti.
